    How to make a salad from overgrown cucumbers for the winter? Prepare the necessary ingredients. Overgrown and large cucumbers are perfect for this salad; the main thing is not to use soft and rotten vegetables. It is better to soak the cucumbers for an hour in cold, clean water. Then they will be especially crispy in the salad. This salad is one of the simplest and fastest; the salad does not require heat treatment.

    Wash the cucumbers, soak in cold water, and rinse again under running water. Cut off the ends on both sides and cut into a semicircle. If you wish, you can leave whole circles or, on the contrary, cut them smaller.

    Peel the onions and cut them into halves of rings.

    Rinse fresh dill under running water and finely chop to about 1 centimeter in length.

    Place all vegetables in a saucepan or large cup. Add sugar, salt, vinegar and vegetable oil. Mix well and leave for half an hour so that the cucumbers release their juice.

    Meanwhile, sterilize the jars. It is better to take small jars, no more than 1 liter, so that the salad can be eaten by the family right away and the jar does not have to be stored open. Pre-sterilize the jars in a way convenient for you (in a water bath, in the oven or microwave). Boil the lids. Place the prepared salad along with the marinade into sterilized jars, place the jars in a saucepan with water and a cloth at the bottom, and cover with lids.

    Bring the water to a boil, then reduce the heat to medium and sterilize for 15 minutes (for 1 liter jars). When removing jars, immediately screw on the lids. Place them upside down and cover with a blanket. Leave the jars in this position at room temperature overnight until the salad has cooled completely. Then put it in a cool pantry for storage until winter. Bon appetit!

A salad of overgrown cucumbers for the winter is just a lifesaver for me, there are a lot of large cucumbers, but what to do with them was a big question. I was until I found this wonderful recipe. I put more onions, almost as much as cucumbers. The end result was a lot of juice. The marinade is delicious, I liked it. Thank you very much for the recipe!

I made this salad. Very tasty. I added some carrots. But the small amount of juice bothers me, I rolled up the jars and got cucumbers on top without juice. I don't know how long they can be stored like this. And it’s a pity to eat everything at once))))
