    Let's prepare all the necessary ingredients for making orange pie in the oven. Since almost all of the orange goes into the pie, it needs to be washed thoroughly. This must be done with a brush and hot water. To be on the safe side, I also wash them with laundry soap and rinse them thoroughly, who knows what kind of hands they went through. Immediately turn on the oven to preheat to 180 degrees.

    Wipe the orange and grate the zest on a fine grater on one side. On the other side, cut off the zest and cut into thin strips. The zest must be cut very thin without the white part, which imparts bitterness.

    Cut off the white part of the remaining orange and cut out segments without films. Cut the extracted pulp into medium pieces. The rest can simply be eaten or added to compote. Of course, you can simply clean it by hand, take it apart into segments and remove the film from each. But then the cooking time will double.

    Break the eggs and separate the yolks from the whites. Place the whites in a clean, cold mixer bowl and put them in the refrigerator for now. Combine the yolks with half the sugar and grind into foam until white.

    Place the mixer bowl and beat the whites with a pinch of salt into a fluffy foam. Continuing to beat, gradually add sugar and beat until smooth and dense.

    Add grated zest to the beaten egg whites.

    Add the ground yolks to the bowl with the whites and zest.

    Sift the flour through a fine sieve directly into the bowl with the beaten eggs and zest.

    Now carefully mix with a plastic spatula to leave the air with which we saturated the masses. You need to do this from the bottom up, as if folding the dough up. We do this until the mass is homogeneous.

    Add the orange pieces and mix gently again.

    Grease a silicone or Teflon-coated metal mold with vegetable oil. Transfer the biscuit mixture and level the surface. I have a mold with a diameter of 18 cm. You can use one with a diameter of 16 or 20 cm. Be careful! The height of the cake also depends on the size of the mold, so the baking time may change up or down.

    Bake the orange pie in a hot 180C oven for about 25-30 minutes, until done (depend on your technique). The top should be light brown and the cake will be firm when pressed. And if you insert a wooden skewer, it should remain dry when you remove it.

    Remove from the oven and leave in the pan for 10 minutes. Then remove from the mold and let cool completely. Place on a large plate, sprinkle with powdered sugar and chopped zest.

The orange cake rose so much in the oven that it cracked (I love it when cakes and cupcakes crack, because cracks are beautiful), and there isn’t even any baking powder in the recipe! And it rose due to the whipped cream. At first it seems like it’s going to take a long time, but no, it’s all pretty fast. The most difficult step is mixing the whipped mass with flour, and it doesn’t take much time. This pie, both outside and inside, tells itself that it is orange. The cut shows pieces of orange, and the top of the pie is decorated with orange zest. The pie is crispy on the outside and soft on the inside. Not dry as usual. Tasty and beautiful. I recommend it even to those who don’t like biscuits. And also for those who are missing oranges on their shelf. Give it a try.
