STEP 1
How to bake homemade onion roll? Prepare all the ingredients for the filling. Remove kefir, cream and eggs from the refrigerator in advance. They should be at room temperature. Peel the onion and chop into small cubes. Heat sunflower oil in a frying pan with low sides. STEP 2
Pour cream into the onion. Season with salt and add smoked paprika. Stir everything and simmer for about 10 minutes. Read more about using cream in a separate article at the link at the end of the recipe.
STEP 3
Once the excess liquid has evaporated, add dried herbs to the filling, stir and turn off the heat. The onion filling must cool completely.
STEP 4
Prepare all the necessary ingredients for the dough. Sift the flour to saturate it with oxygen. This will make the finished roll more airy. Pour dry yeast into kefir at room temperature. Read about all the intricacies of working with yeast in a separate article (link at the end of the recipe). Pour in the cream, add a pinch of salt and sugar. Mix everything until smooth.
STEP 5
Add egg whites. Mix the mixture thoroughly.
STEP 6
Add to the flour in parts, stirring the mixture well each time. You can add flour, sifting it a second time. Depending on the quality of flour, you may need a little more or a little less. You can read more about flour and its properties in a separate article, link at the end of the recipe.
STEP 7
Knead elastic dough. As a result, it should not stick to your hands. Then you can immediately start rolling out, but I recommend covering the dough with a towel and letting it rest for 10-15 minutes. Turn on the oven at 200 degrees.
STEP 8
Roll out the “rested” dough into a layer about 3 mm thick.
STEP 9
Spread the onion filling evenly over the dough, leaving a little space from the edges.
STEP 10
Sprinkle the onion with finely grated cheese.
STEP 11
Fold the two opposite edges inward.
STEP 12
Carefully roll up the roll.
STEP 13
Place the roll in a greased pan. Using a pastry brush, brush the roll with egg yolk and sprinkle with flaxseeds and sesame seeds if desired. Bake the onion roll in an oven preheated to 200 degrees for 30-40 minutes. The exact time depends on your oven.
