STEP 1

How to make nut cookies? Measure out the required ingredients. Instead of 2 yolks, you can use one large egg. But with yolks the cookies will turn out more crumbly. The butter should be soft, so remove it from the refrigerator in advance.
STEP 2

Chop walnuts in a convenient way. You can chop it with a knife or place it in a tight bag and chop it with a rolling pin. Choose the degree of grinding as desired. But it is better if the nut crumbs are not too fine so that they can be felt well in the finished cookies.
STEP 3

Add a couple of tablespoons of flour. Mix the rest of the flour with baking powder and sift through a sieve to enrich it with oxygen. Then the cookies will rise better during baking.
STEP 4

Combine soft butter with sugar and vanilla sugar.
STEP 5

Beat with a whisk or at low speed with a mixer until a light mass is obtained.
STEP 6

Add the yolks to the butter mixture.
STEP 7

Beat everything until smooth.
STEP 8

Add chopped walnuts, mix well.
STEP 9

Add flour sifted with baking powder into the resulting mass and mix. If the dough is still sticky, add the previously set aside flour through a sieve. Less flour may be needed. It all depends on its properties and the size of the eggs.
STEP 10

The dough should be soft, pliable, and not tight. There is no need to knead the shortbread dough for a long time so that the butter does not melt too much from the warmth of your hands. Otherwise, the cookies will turn out rougher and less crumbly. Wrap the dough in cling film and put it in the refrigerator for half an hour.
STEP 11

Form the chilled dough into desired size cookies. Place cookies on a parchment-lined baking sheet. At the same time, leave small distances between the cookies, as they will increase in size during baking.
STEP 12

Bake nut cookies in an oven preheated to 190C for about 25 minutes. It is important not to overdry the cookies so that they do not turn out hard. The cooking mode and time may be different, since each oven has its own operating characteristics. Therefore, focus on your technique.
STEP 13

Cool the finished cookies and serve. Bon appetit!
