  1. STEP 1

    STEP 1

How to make raisin muffins in the oven? Prepare the ingredients: Remove the butter from the refrigerator in advance so that it becomes soft.

  2. STEP 2

    STEP 2

Rinse the raisins thoroughly, scald with boiling water and drain. Then soak in rum.

  3. STEP 3

    STEP 3

Preheat the oven to 160-180 degrees (temperature depends on your oven). Beat the butter with a mixer until it looks like a thick cream.

  4. STEP 4

    STEP 4

Then add eggs and sugar and beat with butter until smooth. Wash the egg with baking soda first, as there may be harmful bacteria on its surface.

  5. STEP 5

    STEP 5

Pour milk into a bowl and mix with a mixer. Sift the flour and baking powder and add them to the butter mixture. Please note that you may need a little less or more flour, focus on the consistency of the dough and adjust the amount of flour for it (to do this, mix most of the sifted flour with baking powder and add it first, and add the rest without baking powder as needed. If necessary - then sift a little more flour)

  6. STEP 6

    STEP 6

The resulting dough should look like good thick condensed milk.

  7. STEP 7

    STEP 7

Pour rum-marinated raisins and candied fruits into the dough.

  8. STEP 8

    STEP 8

Place the dough in a metal muffin tin. Why metal? Because in it they will turn out with a wonderful fried crust. I also baked it in paper molds, it was also tasty, but a little soft. The ideal consistency for this particular recipe, in my opinion, is achieved simply in a metal form. Baking time: 20-30 minutes on medium or low level.

My daughter asked me to make something like cupcakes. I searched the site for similar recipes and settled on muffins with raisins and candied fruits in the oven. I only had 50 grams of raisins. I also added some candied cranberries. I did not soak the raisins in rum. I used oil with a fat content of 82 percent. Eggs added category C1. I needed 150 grams of flour, as indicated in the recipe. I had enough dough to fill 5 130 ml aluminum foil ramekins (7.5 cm in diameter). I baked the muffins for 30 minutes at 180 degrees. The muffins turned out fluffy and fragrant. They have a very pleasant creamy taste. They are soft, tender, but at the same time quite dense and do not crumble. Thank you very much for the recipe!

Magician, the muffins turned out very neat, the raisins and candied fruits are noticeable, and the color is so natural! Still, it’s not for nothing that previously only metal molds were used for both cupcakes and Easter cakes! Beautiful, tasty and satisfying, but most importantly, everything is presented aesthetically))) Well done!

And most importantly, if I can do them, ANYONE can do them! Listen, I don’t know what’s the matter, but it’s really a very simple recipe, I’ve never had a misfire with it, I’m surprised myself. And sometimes I make them in batches of 40, i.e. 4 bookmarks. The only thing that can ruin them is the paper cuffs: they will get wet from the oil.

Natasha, the cupcakes look simply gorgeous, I can imagine how creamy they taste! And the color is so rich. By the way, I love cupcakes for their soft and tender crust.

Wonderful cupcakes!!! They were swept off the plate in a matter of minutes. I used silicone molds and the crust turned out great. Thanks for the idea!!!!
