    How to make mititei in Moldavian style? Prepare your food. Minced meat is usually mixed, pork and beef 1:1. But you can use it to your liking, from any type of meat. Minced meat is suitable both purchased and homemade. It’s better to use corn starch; it makes the mitites more tender.

    Place the mince in a bowl and add cornstarch, salt, baking soda and ground black pepper.

    Peel and chop the garlic, add to the bowl with minced meat. Garlic can be chopped in any convenient way: using a knife, grater or garlic press. Stir the mixture until the products are evenly distributed.

    Pour milk into the minced meat and mix thoroughly again. Milk can take from 60 to 100 ml, depending on the moisture content of the minced meat itself. It’s better to add milk to the minced meat in parts and check the consistency to see if more is needed.

    In order for the minced meat to become dense, it needs to be beaten thoroughly. To do this, take a lump of minced meat in your hands, lift it above the bowl and throw it back. Do this about 15 times. This is an important point! Thanks to this beating, the minced meat will be fried into dense sausages and will not fall apart. Cover the container with the minced meat with a lid or cover with film and refrigerate for at least 3 hours.

    Divide the prepared minced meat into equal parts and form sausages, about 7 centimeters long and 2-3 centimeters thick. To prevent the minced meat from sticking to your hands, wet them periodically with cold water.

    Pour vegetable oil into a frying pan and heat it over medium heat. Transfer the mititei to the frying pan and fry them on all sides until golden brown. Remove the pan from the heat. Preheat the oven to 180 degrees.

    Peel the onion and cut it into half rings. Place the onions in a baking dish, spreading them over the entire surface. Place the fried mititei on the onion.

    Add black peppercorns and bay leaves to the pan.

    Pour water into the mold so that it reaches the middle of the sausages.

    Place the pan in an oven preheated to 180 degrees and bake for 30 minutes. Time and temperature are approximate - use your equipment as a guide. The mititei should be well browned on top.

    Remove them from the oven, arrange them along with the onions on plates and serve.

I prepared Moldavian mititei from homemade minced pork with the addition of starch, soda, salt, seasoning, garlic and milk. After kneading the minced meat, beat it and put it in the refrigerator for 3 hours. I formed the mitites with wet hands, the minced meat turned out to be tender and sticky. I made sausages about 7 centimeters in size, as indicated in the recipe. I fried them in vegetable oil until golden brown. Then I put it in a mold on top of the fried onions, added peppercorns, bay leaves and poured in the broth. Stewed in the oven for 30 minutes. The stewed mititei increased in volume by 1.5 times. To taste, they reminded me of juicy, aromatic sausages, dense and elastic. Very tasty! Thank you very much for the recipe!
