    How to make cutlets from minced pollock? Prepare your food. You can buy minced pollock ready-made or make it yourself from fish fillet, as I did. Homemade minced meat is much tastier than store-bought minced meat. If you have whole pollock carcasses, then cut them into fillets.

    First, soak the bun in milk. For cutlets, they usually take already stale ones; a soft and fresh bun will not absorb the juice from the minced meat as well as a stale one will.

    Then, using a blender or meat grinder (whichever is more convenient), grind the pollock fillet and onion. I ran the fish through the blender.

    Add the soaked bun and egg to the fish. And twist the minced meat again. It will become homogeneous and very tender. If you use a meat grinder, then grind the bun together with the fish.

    Add salt and pepper to taste and knead the minced meat thoroughly.

    Form the minced meat into patties and roll them in breadcrumbs. The shape of the cutlets can be any - round or oblong.

    Heat vegetable oil in a frying pan over high heat. Place the cutlets on it. Make the heat medium. Fry the cutlets on both sides until golden brown.

    To ensure the cutlets have a crispy crust, fry them without a lid.

    They are very soft inside. Serve the cutlets with or without garnish, as you like. Fresh vegetables go great with fish cakes!

Good proven recipe, thanks. I also cook fish cutlets this way, only I fry them in flour rather than breadcrumbs.

I love cutlets no matter what they are made from. I have a special love for fish cutlets. From my own experience I know that the cheaper the fish, the tastier the cutlets. Minced pollock, I would say, is delicate and I add more buns so that the cutlets keep their shape. I always fry “naked”, without breading. Wonderful cutlets!

Very healthy fish in an unusual form and presentation!
