Step-by-step preparation
STEP 1
How to make minced hedgehogs in a saucepan? Prepare the necessary ingredients. Cut the beef pulp into medium pieces, peel the onion and cut in half. I have small onions, I used two for the minced meat and two for the broth, if you have larger onions, then two are enough - one for the minced meat. one in the broth.
STEP 2
Grind the meat and half of the prepared onion in a blender. This process took me 10 seconds.
STEP 3
Transfer the minced meat into a bowl of suitable size, beat in the egg, add the raw and well-washed rice, and add salt to taste. I used uncooked rice rather than half-cooked rice to make the cooking process easier and to help the urchins stick together better.
STEP 4
Mix the minced meat with your hands and taste the salt with the tip of your tongue; you can also add spices to taste: a mixture of peppers, ground black pepper, etc.
STEP 5
Take a small amount of minced meat, transfer it from hand to hand and form round meatballs. Place in a saucepan. They can be made larger or smaller, the quantity will depend on the size.
STEP 6
Pour boiling water over the hedgehogs until they are completely covered, add salt, onion and bay leaf. If you pour cold water, all the flavor will go into the broth, so pour boiling water. I cut the onion into 2 parts, since I did not plan to eat it after cooking; if you plan, then cut it into half rings.
STEP 7
Place the pan on the stove and turn on the heat, wait for it to boil and skim off the foam. Cook the hedgehogs over moderate heat with the lid slightly ajar for 30 minutes. This time is enough for the meat and rice to cook.
STEP 8
Place the finished hedgehogs on a plate. Bon appetit!
