    How to make pilaf without meat with vegetables, carrots and onions in a frying pan? Prepare your food. Any rice will do - round, long, brown, red. But I wouldn’t recommend using the steamed one - it doesn’t absorb fat and the pilaf won’t be as tasty. Take a lot of onions and carrots, they will add juiciness. But use garlic to taste. You can even add three heads. I chose one. For spices, I advise you to take a special set, it includes cumin and barberry.

    First of all, prepare the vegetables. Peel the onion and cut into quarter rings.

    Cut the peeled carrots into strips. Do not grate it, it will turn into porridge, but in real pilaf the taste of the product is important.

    Peel the head of garlic from the top layer of husk, but no more - it is needed in its entirety.

    Take a frying pan with a thick bottom or a cauldron. Heat it over high heat, pour in vegetable oil. Add the chopped onion and fry it, stirring, for a couple of minutes. Then add the carrots. Fry vegetables over high heat, stirring, for about 5 minutes. They should be fried, not stewed. At the end, add salt and spices and stir.

    While the vegetables are roasting, rinse the rice. Wash it for a long time until the water is completely clear. This will wash the starch out of the rice and the pilaf will turn out crumbly. Place the washed rice in an even layer on top of the vegetables. Stick the heads of garlic into it.

    Pour hot water over the rice, this will shorten the cooking time of the pilaf. Pour water carefully down the side so that the rice remains on top. Do not stir the pilaf under any circumstances; it is prepared this way. The water level should be about half a centimeter above the level of the rice.

    Reduce heat to low, cover the pan with a lid and leave the pilaf to cook until the liquid has completely evaporated. This will take 10-15 minutes, depending on the amount of rice.

    When there is no water left, turn off the heat and leave the pilaf to stand for 15 minutes under the lid. The rice will finally be ready.

    And only after that, remove the garlic and mix the rice with vegetables. Pilaf without meat is ready. You can serve it to the table.

I prepared meatless pilaf with vegetables, carrots and onions in a frying pan as a side dish for chicken. My children love pilaf very much, so I decided to surprise them with this version of this dish. To do this, I took regular short-grain rice, not crushed, so that the grains were intact. I washed it for a long time, literally until it squeaked) Luka took twice as much, I like it, especially since it gives the pilaf juiciness. I also cut the carrots into cubes. I cooked it in a cauldron, it’s more familiar. I poured two fingers of water above the rice; in principle, this amount is optimal. The pilaf was steamed over low heat for half an hour, then left to infuse. The end result was simply magnificent rice, all soaked in oil and vegetable juices. The grains of rice turned out the same as in regular pilaf, they did not crumble, but did not turn into porridge. Carrots and onions are also delicious, soft, soaked in their own juice and spices. By the way, from the spices I only took a little pepper and barberry. Very tasty thank you!

Today for lunch I made this recipe for meatless pilaf with vegetables, carrots and onions in a frying pan. Very fast and aromatic, better than in a regular saucepan. The main thing is just that we ate it all with pleasure☺️
