But it is important not to overbeat the eggs: the mass should be fluffy and with many small air bubbles. If you beat too long, until stiff, your crust will not rise when baked.

    Sift the flour with baking powder and add to the dough. Gently mix the mixture with a silicone spatula from top to bottom, making sure that the dough does not settle and breaking up all the flour lumps.

    Place the dough in a parchment-lined and greased baking dish (25x35 cm) or on a baking sheet and level it out. The dough should be about 1.5 cm thick. Bake the cookies in an oven preheated to 180°C for 15-20 minutes until golden brown. The exact time depends on your oven.

As far as I know, these are Polish cookies, which are traditionally also prepared in the form of a pie. But I added additional raisins and dried apricots to it. In my opinion, it turned out magical and even more beautiful! Thanks for the recipe.
