Many people remember the taste of "Provencal" mayonnaise, sold in grocery stores in the eighties of what has recently become the past of the twentieth century. Despite the fact that today there is a huge selection of mayonnaise in stores, it is quite difficult to find the same taste familiar from childhood. Therefore, I had to remember the culinary recipe I heard somewhere in deep childhood for “Homemade Provencal” mayonnaise, which even in those distant years some housewives prepared with their own hands, considering it tastier and healthier than store-bought.

The recipe is wonderful, very easy and quick to prepare. But we usually use more natural types of vinegar for ourselves - wine (gives sourness) or apple (gives a sweet taste). Many thanks to the author.
