Mackerel stewed with vegetables

Fish for the everyday menu and for a festive dinner. Mackerel is very healthy, and when stewed or boiled, it is also a dietary food. I really like stewing it with vegetables, I find it an excellent solution for dinner, because it’s very easy to prepare it this way.

    1. Wash the vegetables, pour boiling water over the tomatoes and remove the skin.

    3. Add vegetable oil to a hot frying pan and first fry the onion. Then add carrots and bell pepper. Sauté over low heat for 10 minutes.

    4. Wash the mackerel, remove the black film from the belly, cut off the fins, head and tail. Add chopped tomatoes to the vegetables. Cut the fish into portions, salt and pepper to taste and place on a vegetable bed. Close the lid and simmer for 10 minutes.

    5. After 10 minutes, turn each fish piece over and add tomato paste. I try to mix it up and put some vegetables on top of the fish. If there is not enough liquid, then add a little water to prevent it from burning. Close the lid and simmer for another 20 minutes, stirring the vegetables a couple of times.
