I always try to salt and marinate the fish myself; the day before yesterday I made pieces of mackerel marinated with onion and vinegar. First of all, I cooked the brine and let it cool completely. I cut freshly frozen fish without waiting for complete defrosting, so it is easier to cut into pieces. I cut the onion into rings, layered it with chopped mackerel, poured it with cold brine, and put the container with the fish in the refrigerator. Two days later we tried the fish: yummy!!! I had one mackerel weighing 455 g (after defrosting). You need to defrost the fish carefully, without using a microwave or hot water, otherwise it will become extremely unpalatable. The marinade was cooked quickly and cooled just as quickly in a cold place. Just at this time I gutted and washed the fish and cut it up. I cut the onion into half rings. All this fit into a 700 ml jar. Marinade from 250 ml. There was just enough water too. After standing for a while, the brine became cloudy, and the mackerel became a little lighter. The vinegar seems to “cook” the fish. It marinated for two days. It turned out delicious! You can feel the vinegar sourness, salt and sugar in moderation.
