For lunch I made mackerel in mayonnaise in the oven, baked with onions in foil. How delicious it is! I baked mackerel along with potatoes, which is very convenient, since both a hot dish and a side dish are prepared at the same time. I cut the potatoes into thin slices and the onion into half rings. In a deep bowl, I combined the vegetables with chopped herbs (I had frozen dill) and salt. I added vegetable oil myself so that the potatoes would get a crust when baking. Mixed everything and put it on a baking sheet lined with foil. I placed the fish on top. I salted it, sprinkled it with Italian herbs and poured it with citric acid diluted in water, which I used instead of lemon juice. Covered the top of the baking sheet with another piece of foil and put it in the oven for 1 hour. The temperature was set to 220°. At the end, I coated the mackerel with mayonnaise and put it in the oven for another 10 minutes, but without foil. The mackerel turned out tender, and thanks to the foil, it was also juicy and oh-so appetizing! The potatoes were baked well, became soft, and my favorite crust formed on the bottom. Onions, dill and vegetable oil turned into something incredibly tasty - something like a roast, but very juicy and tender, with an amazing salty taste. My husband and I didn’t notice that we ate both the fish and the side dish. Thank you so much for the wonderful recipe!
