STEP 1

How to make lyutenitsa in Bulgarian style for the winter? Prepare all the products according to the list indicated in the recipe. If you want a hot sauce, add chili peppers to the ingredients. The amount of garlic can be increased or decreased as desired. So, wash all the vegetables and herbs and dry them with a kitchen towel.
STEP 2

Line a baking tray with baking paper. Place eggplants and bell peppers in one layer. Drizzle a little vegetable or olive oil on top. Place in a preheated oven and bake at 180 degrees for about 40-60 minutes (time and temperature may differ from those indicated in the recipe).

By the way, vegetables for lyutenitsa can be baked on the grill, then you will get an amazing sauce with a light smoky aroma. Once the peppers and eggplants are slightly charred and the skins are slightly charred, you are ready to move on to the next step.
STEP 4

Remove vegetables from oven and place in plastic bag.
STEP 5

Tie the bag and leave the eggplants and peppers this way for an hour or two. After the vegetables sit in the bag, you can easily peel them.
STEP 6

Cut the tomatoes in half or quarters. If necessary, cut off the attachment points of the stalk. Pass the tomatoes through a meat grinder or puree with a blender.
STEP 7

Place the tomatoes in a saucepan and place on the stove. Bring to a boil, then reduce the heat to medium and cook the tomatoes for about 20 minutes.
STEP 8

Meanwhile, peel the carrots and garlic. Grate the carrots on a fine grater.
STEP 9

Heat vegetable oil in a frying pan, add carrots and fry for about 15 minutes over medium heat. Don't forget to stir from time to time to prevent anything from burning.
STEP 10

Remove the skins from the cooled eggplants and peppers. Remove the core and seeds from the peppers.
STEP 11

Chop the vegetables into small cubes.
STEP 12

Place eggplants, peppers, fried carrots and finely chopped garlic into a saucepan with tomato puree. At this point add the chilli powder if using. Place the pan on the stove. Bring to a boil over high heat, then reduce the flame and cook for about 30 minutes, stirring occasionally.
STEP 13

Add salt, sugar, butter, ground black pepper, paprika and finely chopped parsley to all ingredients. Boil everything together for about 10 more minutes. Pour in vinegar and leave for 2 minutes. Taste and add the missing component if necessary (I slightly increased the amount of salt).
STEP 14

Sterilize jars and lids using any method available to you. You can do this in the oven, microwave or in a water bath. Place the lyutenitsa into sterile jars, close the lids and place upside down under a warm blanket. Leave to cool completely, then store in a cool, dark place.
STEP 15

Amazingly delicious vegetable sauce is ready!
