The dough is prepared in 5-10 minutes. Take sugar, salt and egg

Add kefir and mix

Add soda

Then vegetable oil and mix again

A reaction occurs, the soda is quenched with kefir and the mass begins to bubble

Now sift the flour to saturate it with oxygen

Use a spoon and then use your hands to knead the dough.

The dough should be a little sticky, soft and not hard

Cover with the bowl in which you kneaded the dough and let it rest for about 20 minutes - during this time the gluten in the flour will swell and it will be easy to work with.

Then roll out the dough into a layer up to 1 cm thick

Cut into diamonds

Make a cut in the middle of each diamond

The scraps can be collected and rolled out again, but I’ll fry them in this form - you’ll get excellent donuts

We turn one edge of the dough through the cut as usual with brushwood.

Now you need to properly heat the oil for frying - first heat the frying pan, and then pour vegetable oil into it, it should be hot, but under no circumstances burn! It is very important. To check the desired temperature, you need to dip one piece of dough into the oil and watch how it fries

When we have reached the desired oil temperature, we place our vergunas in the frying pan and watch them grow right before our eyes! They fry quickly - about 1 minute on each side.
