Lush verguns on kefir

You will immediately fall in love with soft, fluffy, rosy vergunas with honey! Verguny is a dish of Ukrainian cuisine; it looks similar to Russian brushwood, but differs in composition. When I have kefir and nothing for tea, I happily prepare such verguns - in the heat of the moment it’s just a song! And every housewife can cook them, even if she doesn’t have an oven in the kitchen.

Step-by-step preparation

Cooking timeCooking time: 50 mins
  1. STEP 1

    STEP 1

    Required Ingredients

  2. STEP 2

    STEP 2

The dough is prepared in 5-10 minutes. Take sugar, salt and egg

  3. STEP 3

    STEP 3

    Mix

  4. STEP 4

    STEP 4

    Add kefir and mix

  5. STEP 5

    STEP 5

    Add soda

  6. STEP 6

    STEP 6

Then vegetable oil and mix again

  7. STEP 7

    STEP 7

A reaction occurs, the soda is quenched with kefir and the mass begins to bubble

  8. STEP 8

    STEP 8

Now sift the flour to saturate it with oxygen

  9. STEP 9

    STEP 9

Use a spoon and then use your hands to knead the dough.

  10. STEP 10

    STEP 10

The dough should be a little sticky, soft and not hard

  11. STEP 11

    STEP 11

Cover with the bowl in which you kneaded the dough and let it rest for about 20 minutes - during this time the gluten in the flour will swell and it will be easy to work with.

  12. STEP 12

    STEP 12

Then roll out the dough into a layer up to 1 cm thick

  13. STEP 13

    STEP 13

    Cut into diamonds

  14. STEP 14

    STEP 14

Make a cut in the middle of each diamond

  15. STEP 15

    STEP 15

The scraps can be collected and rolled out again, but I’ll fry them in this form - you’ll get excellent donuts

  16. STEP 16

    STEP 16

We turn one edge of the dough through the cut as usual with brushwood.

  17. STEP 17

    STEP 17

Now you need to properly heat the oil for frying - first heat the frying pan, and then pour vegetable oil into it, it should be hot, but under no circumstances burn! It is very important. To check the desired temperature, you need to dip one piece of dough into the oil and watch how it fries

  18. STEP 18

    STEP 18

When we have reached the desired oil temperature, we place our vergunas in the frying pan and watch them grow right before our eyes! They fry quickly - about 1 minute on each side.

  19. STEP 19

    STEP 19

Turn over and cook on the other side

  20. STEP 20

    STEP 20

And these are the donuts that I got from scraps

  21. STEP 21

    STEP 21

These are the lush, rosy verguns we got!

  22. STEP 22

    STEP 22

Sprinkle with powdered sugar if desired. Enjoy your tea!
