Linzer cookies

Delicate, crumbly, delicious cookies. New Year's! In general, the history of this Austrian cookie dates back to 1696. Rumor has it that it displays a miniature version of the Linzer cake - the first cake in history. Now this is a mandatory New Year's delicacy for Europeans. It is made in advance and baked a lot; it is stored in tin cans in a cool place. They even give it to their family and friends in beautiful cellophane bags. In general, if you have never tried it, then definitely do it. They serve it with coffee and tea!

  1. STEP 1

    STEP 1

These are the products we will need.

  2. STEP 2

    STEP 2

Beat soft butter until white, add powdered sugar and beat again. Next, add the yolks and mix.

  3. STEP 3

    STEP 3

Add ground peeled almonds. You can take it unpeeled, then the color of the cookies will be different. Next, add flour with baking powder. If you like spices, you can add cinnamon or vanillin.

  4. STEP 4

    STEP 4

Knead the dough. Do not add excess flour, otherwise the dough will crumble. Roll it into a bun and wrap it in film. Let's put it in the refrigerator for an hour. I put it away for the night. This is also possible.

  5. STEP 5

    STEP 5

In the morning I took it out and left it on the table for 40 minutes. Next I cut it in half.

  6. STEP 6

    STEP 6

Roll out on paper directly through the film. It is desirable that the layer be rolled out equally everywhere. It’s not that the edges are thin and the middle is thick. There are special rolling pins where you can fix the height. And we cut out the figures. We remove the excess dough and the cookies remain on the paper.

  7. STEP 7

    STEP 7

Place the preheated oven at 180 degrees for 10 minutes. The cookies should not be toasted.

  8. STEP 8

    STEP 8

Roll out the other part of the dough in the same way. Squeeze out the cookies and squeeze out more centers.

  9. STEP 9

    STEP 9

Which we have with holes, ready to sprinkle immediately with powdered sugar while still warm. But you don’t have to do this.

  10. STEP 10

    STEP 10

Now spread the jam on the cookies without the middle. If it is thick, warm it up in the microwave.

  11. STEP 11

    STEP 11

And now we apply the halves with the middle. All . Ready! We put them in tins and put them in the cold. They can be stored this way for a long time. But they are usually eaten quickly.

The cookies are very beautiful, but the name of this cookie comes from the name of the Austrian city of Linz, so in Russian it is correct to call these pastries “Linzskaya” and not “Linzerskaya”.
