STEP 1
How to make lean noodles? Sprinkle with salt as much as we need. Mix the dough.
STEP 2
The flour must be sifted! Take the sifted flour and pour it into a small container.
STEP 3
Add salt as much as we need and vegetable oil. (I used olive oil).
STEP 4
Then add boiling water (steep), the boiling water should be strong, literally just off the heat, and immediately start kneading. At first you can stir with a tablespoon, but then, as it becomes thicker, only with your hands.
STEP 5
Knead the dough. Check the flour according to your dough, add more if necessary. The better you knead, the tastier the noodles. Lenten noodles are difficult to prepare for a beginner, primarily in making the dough. Have patience and try to knead it well.
STEP 6
Then we wrap our dough ball in film and leave it for 30-40 minutes - let it rest.
STEP 7
Then we divide the rested dough into pieces - this makes it easier to roll out. Dust the table with flour and roll out into thin layers.
STEP 8
Adjust the thickness yourself. What kind of noodles do you want - thicker or thinner?

Then roll the dough into a roller and cut into strips with a knife)
STEP 10
This is how the noodles turned out. Sprinkle a little flour. And give it time to dry. Ready pasta needs at least an hour, or better yet, more time, to dry thoroughly and become suitable for cooking. For stock noodles, the optimal solution is to extend drying for a couple of days.
STEP 11
