I just love all kinds of sauces, and mayonnaise is a special place for me. You, Vega, showed an interesting recipe for making mayonnaise. But, unfortunately, I’m not familiar with soy milk. Irish, do you sell tofu? This is, in principle, also a vegetable protein, just in a different form of preparation. Rub it into a paste somehow... I’ll be honest, I’m not very good at chemistry (to be completely honest, it’s extremely bad, the only subject other than physics in which I got a C mark!) - but in normal mayonnaise, the emulsion is created by base of eggs and mustard. There is also garlic - also an emulsifier.

It’s just a pity that soy milk can’t be found everywhere, I’m not sure that my advice will help, but you can try using any “plant milk”, for example cedar milk, poppy seed milk, hemp milk, almond milk, rice milk, oat milk, coconut milk. Here you can conduct experiments. What if you like something? Although I personally am quite happy with regular homemade mayonnaise, I usually make the dressing with mayonnaise and yogurt at the same time, it turns out more tender.
