Take premium flour with a high percentage of gluten (strong) or even 1st grade. Eggless dough made from weak flour with low gluten content runs the risk of remaining soggy or not baking well. Vegetable oil needs to be refined and odorless. Turn on the oven to 180 degrees in advance.

    In a bowl, combine orange juice, water, sugar and salt. Stir everything until the sugar and salt dissolve. To dissolve the crystals faster, you can add warm water.

    Add vegetable oil and orange zest and stir again.

    Add the flour sifted with baking powder and mix thoroughly. The dough should be viscous but fluid. Leave the dough to allow the gluten to develop in the flour.     Wash the apples and remove the core. You can cut off the skin or leave it as you prefer. Cut the pulp into medium cubes. To prevent the apples from darkening, as I cut them, I immediately transfer them to a bowl of cold water, acidified with 2 tbsp. l. lemon juice. This way, even the sweetest varieties do not darken. You can take apples of the same variety or different ones. The main thing is that they themselves are tasty, fragrant and juicy.

    Line a baking pan (Ø 20 cm) with parchment. Grease the sides with vegetable oil and sprinkle with flour. If the mold is silicone, there is no need to grease it.     Charlotte is very tender when hot, so let it cool before removing it from the mold. Sprinkle the charlotte with powdered sugar and serve. Please note that lean baked goods without eggs differ in structure from regular ones. The cake is not as fluffy and porous as, for example, a sponge cake, but it is very soft and tender. I baked a Lenten charlotte with apples in the oven for my husband. I wanted to please him with delicious pastries during Lent. I have already baked several Lenten pies and noticed that the dough is mostly mixed with orange juice. This is probably not easy) I like how this dough behaves, and the pie turns out very tasty in the end. For this charlotte, I squeezed the juice out of oranges, it took me 1.5 pieces. The dough kneaded quickly, it was quite liquid and flowing. I had some “crumbly” apples, cut them into pieces and placed them between the layers of dough in the middle. During baking, the charlotte rose well, resulting in a tall, fluffy pie. The aroma of apples and oranges is simply stunning! The charlotte turned out delicious, crumbly and juicy from the apples. The pieces keep their shape perfectly. Next time I’ll try adding lemon zest as an experiment) Thanks for the recipe, it helped me out.

On fasting days, you always really want to cook something tasty for dessert, but whatever is possible. I baked Lenten charlotte with apples in the oven according to this recipe. It is prepared from available lean products, and the result is a very aromatic light pie AND very tasty! Thank you very much to the author for the recipe! I’ve been wanting to try eggless baking for a long time, and I just saw a Lenten charlotte with apples on my favorite website. I took 1st grade flour so that the dough would certainly not be sticky. The kneading is simple and the dough has a creamy consistency. There was no special wait for gluten activation, because... the dough “rested” while I dealt with the apples. The pie turned out very tasty, slightly moist and at the same time loose and porous. Orange juice adds a very nice flavor to baked goods. I liked the recipe and will make it again!
