Step-by-step preparation
STEP 1
Prepare the ingredients. Brew 250 ml of strong black tea and cool it.
STEP 2
Rinse the dried fruits thoroughly. Pour tea over the dried fruits. Add sugar and stir well to dissolve the sugar. Cover with film or a lid and leave overnight - this is a mandatory and simple condition. Soak in the evening and bake in the morning.
STEP 3
So. Morning has come. Preheat the oven to 160ᵒ C. Prepare dried fruits: cut dried apricots into 4 parts, cut prunes in half.
STEP 4
In a bowl, mix flour with baking powder, salt, nutmeg and pepper. Add lemon zest. Mix well.
STEP 5
Add dried fruits and tea to the flour. Mix well.
STEP 6
Lightly beat the eggs.
STEP 7
Add eggs and mix well. The mixture should look like this.
STEP 8
Grease the pan with oil and pour the mixture into it. Bake at 160ᵒC for 60-80 minutes. Place on a wire rack to cool.
STEP 9
When cool enough, remove. You can carefully run a sharp knife along the edges to make it easier to remove. This is such a beautiful brick. Decorate with powdered sugar (optional).
