    Bake the leg for 15 minutes in an oven preheated to 220 degrees, then reduce the heat to 180 degrees. We calculate the remaining baking time based on the proportions - 20 minutes per kilogram. In my case it is 70 minutes. Remove the meat from the oven and let it rest for 10 minutes. Drain off the sauce that has accumulated in the sleeve. We strain it and fill the gravy boat. Then we cut the meat, put it on plates and pour over the sauce. Bon appetit!

In our family, either my husband or my dad usually cooks leg of lamb. This time I decided to cook the lamb. I looked for recipes and, among others, I was interested in the recipe for a leg of lamb baked in the oven in a sleeve - an express method. The leg of lamb was small, weighing about 1 kg 200 g. According to the calculations of the ingredients, there were seven servings. I didn’t have the utskho-suneli seasoning. I had to find a way out and use the spices that were available. Having searched on the Internet what spices are suitable for lamb, I took: nutmeg (1/5 teaspoon), ginger (1/6 teaspoon), cardamom (1/5 teaspoon), paprika (1/3 teaspoon), sweet peas (3 peas, first grind them in a mortar). I put one teaspoon each of ground black pepper and salt, and I took 1/2 teaspoon of cumin. The leg was marinated for half an hour. I would like to note that it is probably better to apply the marinade directly in the sleeve, since the onion mixture tends to slide off the lamb while you transfer it to the sleeve, and this threatens additional cleaning. I baked the leg of lamb as it is written in the recipe: 15 minutes at a temperature of 220 degrees, then 20 minutes for each kilogram of meat (in my case 35 minutes) at 180 degrees. However, during this time the lamb was a little undercooked, so I left it in the oven for another 15 minutes. The leg of lamb turned out very flavorful. Spices perfectly emphasized the taste of the lamb itself, especially cumin. Next time I will definitely cook the leg with utskho-suneli, as recommended in the recipe.
