STEP 1

How to cook lamb over a fire? First of all, prepare all the products that are indicated in the recipe. What kind of meat is better to take? Young lamb meat is ideal for cooking over coals. In this case, the kebab will be soft, tender and without a particularly pronounced smell. If you have a more mature individual, then use lemon for marinating; it will slightly neutralize the smell of lamb and make the pieces softer. Cut the lamb into small portions.
STEP 2

Peel the onion, rinse in cold water and dry. Cut one onion into rings, and chop the second into fine cubes.
STEP 3

Finely chop the onion with your hands to release the juice. Add the onion to the meat. Add spices to taste. If desired, add finely chopped herbs at this stage of cooking. Basil, cilantro or parsley go well with lamb. If the meat is tough, add squeezed lemon juice. Add some salt. There is no need to add a lot of salt before marinating. It is better to add the insufficient amount of salt immediately before frying.
STEP 4

Mix everything thoroughly and place the meat in a pan or other suitable container.
STEP 5

Place the onion rings on top of the lamb and press down lightly. Cover the container with a lid or wrap it with cling film. Place the meat in the refrigerator for at least 3 hours, preferably overnight, to marinate.
STEP 6

Thread the marinated lamb onto skewers. Remove small pieces of onion and herbs, as they will burn during the cooking process and ruin the appearance of the finished dish.
STEP 7

Light up the grill. When the coals are ready, place the kebab to fry.
STEP 8

Turn the skewers periodically to prevent the lamb pieces from burning.
STEP 9

Bring the kebab to readiness. The roasting time depends on how young the lamb is and the size of each piece. You can check for doneness by making a cut on the largest piece of meat. If you see clear juice, then the kebab is ready! Also, do not fry the lamb for too long, otherwise it will turn out dry and tough.
STEP 10

The most aromatic lamb on the fire is ready! Serve hot with fresh herbs, vegetables and salads!
