STEP 1
How to make lamajo - Armenian flatbread? Measure out all the necessary ingredients. Remove the kefir from the refrigerator in advance; it should be at room temperature. Be sure to sift the flour to saturate it with oxygen. This will have a positive effect on the quality of baked goods. Please note that you may need more or less flour than indicated. It all depends on its properties. Combine flour, salt and kefir in a container.
STEP 2
Stir the ingredients and knead the dough. Add a little flour if necessary. Focus on the consistency of the dough. It should be elastic, not sticky, like dumplings. Cover the bowl with cling film and place in the refrigerator for 30 minutes. Turn on the oven to 220 degrees in advance.
STEP 3
Rinse the lamb fillet under cool running water. Dry it with paper towels. Cut the meat into small pieces and grind through a meat grinder. Peel the onions and garlic. Rinse fresh herbs to taste (parsley, dill, cilantro, basil, green onions), dry and finely chop.
STEP 4
Place onion, garlic cloves, chopped herbs, and tomato paste into a blender bowl. If you use fresh tomatoes instead of pasta, wash them, clean them from the stalk, lower it for 1 minute in boiling water, remove and remove the skin. Cut tomatoes into small slices and send to the rest of the ingredients. Grind everything into a homogeneous slurry. Put in minced meat. If you do not have a blender, pass the garlic cloves through the press, chop the onion as smaller as possible.
STEP 5
Thoroughly mix the minced meat with the mixture of onions, garlic and herbs. Add salt and pepper to taste. Keep in mind that the filling should be spicy.
STEP 6
Remove the bowl of dough from the refrigerator. Place it on a floured work surface and divide into 6 pieces (each weighs about 80 g). Roll each piece of dough into balls the size of table tennis balls. Flatten them slightly with your palm. Dust with flour and roll out into a thin, round cake (about 3mm thick).
STEP 7
Line a baking tray with oiled baking paper. Or lightly grease the bottom with butter. Lay out the tortillas. Coat them with a thin layer of minced meat (about 1 tbsp). Do not put the minced meat in a thick layer, otherwise the meat juice will flow onto the baking sheet, burn and the baked goods will be spoiled.
STEP 8
Bake the cakes at 220 degrees for about 7-8 minutes. Since everyone's oven bakes differently, baking times and temperatures may vary. Focus on the features of your technique and the readiness of your baking. When you see that the edges of the lamajos are browned and the meat is ready, remove the pan from the oven. Sprinkle the top of the baked goods with chopped herbs and serve. Bon appetit!
