    Quickly knead a homogeneous shortbread dough. As soon as the dough begins to form a lump and pulls away from the sides of the bowl and your hands, it is ready.

    Spread the dough over the bottom and sides of a parchment-lined baking dish (Ø 22-26 cm). A springform pan or tart pan with fluted edges will work. Place the pan with the dough in the freezer for 10 minutes.

    Place parchment paper on the dough, pour a weight on top (I used dry beans). Place the pan in an oven preheated to 180°C for 15 minutes.

    Meanwhile, prepare the filling. Take strong kiwis. Soft fruits do not hold their shape well and may spread during slicing or baking.

Hooray! A pie with kiwi in the oven appeared in the feed! I just love kiwi, but there aren’t very many dishes featuring this exotic dish. We don’t eat salads with kiwi, but we ate the sweet pie quickly) I don’t often bake pies with a shortbread base, it doesn’t always work out for me, so it took me a long time to get ready for this baking. This time the base was baked well, thanks to the fact that it was baked separately first. I did everything according to the instructions, after baking the cake, I laid out the kiwi slices, poured the filling on top and baked. The last layer of kiwi was baked for 15 minutes, which is probably why the green color faded a little. But this is not at all important) I cooled the pie well before serving; it seemed to me that the filling was a bit runny when warm. After cooling, we tried the pie and the whole family was pleased. The sand base is well baked, tasty like a cookie) The filling has become like a creamy custard, very tender, sweet and it has thickened significantly. Kiwis are slightly sour after heat treatment, which goes well with the sweet cream. Delicious pie, I'm happy with the result. Thank you!
