  1. STEP 1

    STEP 1

How to make kiwi marinade? Prepare the necessary ingredients. You can use any meat - pork or beef. I have pork. Take a large, juicy kiwi, not very hard, but not quite soft either. If the fruit is small, take two.

  2. STEP 2

    STEP 2

Peel, wash and dry three onions and kiwi.

  3. STEP 3

    STEP 3

Cut one onion and kiwi into pieces.

  4. STEP 4

    STEP 4

Place them in a blender and puree until smooth. Instead of a blender, you can use a meat grinder! If you don’t like the strong taste of onions in kebab, then chop only the kiwi, and simply cut the onion into rings along with the rest.

  5. STEP 5

    STEP 5

You should end up with a pale green paste like this.

  6. STEP 6

    STEP 6

Cut the remaining 2 onions into rings and lightly salt them to release their juice.

  7. STEP 7

    STEP 7

How to marinate pork kebab with kiwi so that the meat is juicy? Start preparing the meat. Wash the selected meat, dry it and cut into medium pieces for barbecue. If you cook on coals, then the pieces should be of normal sizes; if you bake kebabs in the oven, then the pieces should be slightly smaller. Not quite small, but not like a regular barbecue either. Otherwise the meat will dry out.

  8. STEP 8

    STEP 8

Add kiwi puree and onion to the meat and stir.

  9. STEP 9

    STEP 9

Lay out whole onion rings, pour in vegetable oil.

  10. STEP 10

    STEP 10

Salt, pepper and mix everything thoroughly. Cover the bowl of meat with cling film and leave to marinate for 30-40 minutes at room temperature or refrigerate overnight.

  11. STEP 11

    STEP 11

Thread the meat and onion rings, alternating, onto skewers. At the time of preparing this dish, the kebab season had already ended, so I baked the kebab in the oven, replacing the skewers with long wooden skewers.

  12. STEP 12

    STEP 12

Bake the kebabs over the coals until cooked through. If cooking in the oven, place the prepared kebabs on top of a suitable-sized baking sheet lined with parchment. To prevent the skewers from darkening from high temperatures, you can wrap the meat-free ends in pieces of foil. Bake the skewers in an oven preheated to 180°C for about 35-40 minutes, turning occasionally. Focus on your oven. Serve the kebabs hot. Bon appetit!

I'll have to try this marinade! You can also marinate pork kebab like this - mineral water, onions and spices. Also an excellent result!

I have never made a kiwi marinade for barbecue before. To be honest, I never even thought that this fruit could be used for such purposes. I made this marinade for chicken drumsticks. They marinated for about an hour. I cooked the drumsticks in the oven, securing them to the rack with toothpicks, for about an hour. Under them I placed a baking sheet with chopped potatoes laid out on it. I didn’t feel a distinct taste of kiwi, but the fact that the meat turned out to be more tender than usual is for sure. I'll take note of this recipe and try to marinate pork like this next time. Maria, thank you very much for the recipe!
