    Khichin is a delicious Adyghe dish, which is something between a flatbread and a pie with filling. The peculiarity of preparing khichin is that they are fried without the use of oil - in a dry frying pan. The dough is very easy to prepare! It requires flour, kefir, soda, salt and spices. For the filling, prepare potatoes, Adyghe cheese, sour cream and herbs. Boil six medium-sized potatoes whole in advance in salted water.

    Add soda, salt, coriander and pepper to kefir. There is no need to extinguish the soda first - kefir will do this. Mix thoroughly.

    Pour flour into the resulting mixture in small portions and stir. When all the flour is in the bowl, knead the dough.

    Knead the dough until it stops sticking to your hands. It won't take much time - literally a few minutes. The dough should be dense and elastic.

    Prepare the filling. Start with potatoes, which you grate on a coarse grater.

    Do the same with cheese. If the cheese is soft and has a consistency similar to cottage cheese, you can simply mash it with a fork. Add cheese to grated potatoes.

Sumeilo! I just love eating potatoes and cottage cheese like this! But I never told anyone about it, because I thought it was a perversion to eat like that, and there’s even a recipe for it!
