    STEP 1

How to cook Kharcho soup with tomato paste? First, prepare the products according to the list. You can replace the beef with another type of meat according to your taste. In this case, it is better to take the meat with a bone so that the broth is rich and tasty. You can replace the tomato paste with ketchup or fresh pureed tomatoes.

  2. STEP 2

    STEP 2

Pour clean water into the pan and bring to a boil. Add the beef and cook over medium heat, skimming off any foam, for about 1 hour or a little longer, until the meat is tender. The exact cooking time depends on the selected part of the carcass and the age of the animal.

  3. STEP 3

Rinse the rice until the water runs clear.

  4. STEP 4

    STEP 4

Peel the onion and cut into half rings. If you or your children do not like onions in first courses, you can add the whole onion along with the meat (step 2) and discard it at the end of cooking. The onion will give the broth its taste and aroma.

  5. STEP 5

  6. STEP 6

    STEP 6

Peel the garlic and finely chop it or pass it through a press.

  7. STEP 7

    STEP 7

Remove the finished meat from the pan. Separate the flesh from the bones and cut into small pieces

    STEP 8

Strain the broth. Return the pan to medium heat. Place the rice in the pan. Cook, stirring, for about 10 minutes.

  9. STEP 9

    STEP 9

While the rice is cooking, heat the vegetable oil in a frying pan over medium heat. Add the onion and fry until transparent.

  10. STEP 10

    STEP 10

Add tomato paste and suneli hops to the pan. Fry, stirring, 2-3 minutes.

  11. STEP 11

The kharcho turned out rich, satisfying, hot, spicy, with a bright garlic taste. It’s not for nothing that it’s called a man’s dish. That's probably true. In our family, everyone loves this amazing dish, so we often ask to cook it. I prepared kharcho with tomato paste on pork, having prepared the broth from it in advance. I added short-grain rice to the finished broth; I like it for its delicate creamy taste. Then fry with onions and tomato paste. Instead of suneli hops, I added dried basil and parsley. At the very end, I put the garlic and salt, which had been pressed through a press, into the pan. Pepper was added directly to the plates to taste. Thank you very much for the recipe!
