Recipes for kharcho soups amaze with their variety. But the most authentic, typically Georgian version cannot be prepared without adding dried tkemali plums. Try adding chopped walnuts and aromatic spices to rice, potatoes and onions to make your dish unique and incredibly tasty. Georgians love spicy food, so adding garlic and hot red pepper is a must.
For kharcho soup, you shouldn’t skimp on greens. It will sparkle with new notes if you add cilantro, basil, chopped parsley and dill, and a sprig of tarragon to the warm broth. You can’t do without suneli hops - a classic seasoning, without which the taste and aroma of the soup will be incomplete. Kharcho is prepared in a thick-walled saucepan or cauldron over low heat. The process does not tolerate haste and fuss. Serve with flatbread and boiled meat, sour cream and tkemali sauce.
