STEP 1

How to make khachapuri with kefir in a frying pan? Prepare the ingredients according to the list. First beat one large egg with a fork until the white and yolk are mixed. Half the egg will be needed for the dough, and the other half for the filling. Use premium flour. Kefir should be at room temperature, so remove it from the refrigerator in advance.
STEP 2

Pour room temperature kefir, half a beaten egg into a bowl, add salt, sugar and baking powder. Mix everything with a whisk until smooth. By the way, you can replace the baking powder in this recipe with soda, since the dough contains an acidic medium.
STEP 3

Add the sifted flour in parts and knead into an elastic, non-sticky dough. You may need more or less flour, so focus primarily on consistency. Don't rush to add all the flour at once.
STEP 4

Divide the dough into 4 equal parts and roll into equal balls. I got balls weighing 100 g each.
STEP 5

Cover the dough with film and leave to rest at room temperature for 10 minutes.
STEP 6

Now start preparing the filling. You can use cheese for khachapuri to taste. Suluguni, not very salty Adyghe cheese, or regular Russian or Gouda type would be ideal.

Grate the cheese on a coarse grater.
STEP 8

Pour the remaining half of the egg into the grated cheese, add salt and pepper to taste and mix.
STEP 9

Roll out each piece of dough on a floured table into a circle with a diameter of approximately 15-18 cm, but no larger than the diameter of the frying pan in which the khachapuri will be baked. At the same time, shake off excess flour from the rolled out cakes with a brush so that the flour does not burn in the frying pan.
STEP 10

Place the cheese filling in the center of the flatbread.
STEP 11

Gather the edges of the dough in the center over the filling and pinch tightly while releasing the air from the dough.
STEP 12

Turn the tortilla over with the seam side down and carefully roll it into a circle with a diameter of 15-18 cm. If air bubbles still collect inside, carefully pierce them with a toothpick. Prepare the rest of the tortillas in the same way.
STEP 13

Fry the khachapuri in a dry frying pan preheated over medium heat for about 1-1.5 minutes on each side until golden spots appear. You can cover the pan with a lid. As an experiment, I baked khachapuri both with and without a lid. The result is the same.
STEP 14

Generously grease the finished khachapuri with butter and stack it on top of each other. Serve immediately while hot and the cheese inside is melted. Bon appetit!
