STEP 1

How to make kefir flatbreads in a frying pan with filling? Prepare the necessary ingredients. All products stored in the refrigerator must be taken out in advance so that they are at room temperature. Beat the egg into a deep bowl. Add sugar and salt to taste. Mix the ingredients with a whisk or mixer. Wash the egg with baking soda first, as there may be harmful bacteria on its surface.

Pour room temperature kefir into the egg.
STEP 3

Add vegetable oil to the bowl. Mix everything again.
STEP 4

Sift the wheat flour through a sieve to saturate it with oxygen. Add baking powder, mix with flour. Add the flour little by little into the bowl with the liquid. You may need less or more flour. Knead the dough first with a tablespoon, then put it on a table dusted with flour, and knead a soft dough that does not stick to your hands. Roll it into a ball, wrap it in cling film and let it rest on the counter for about half an hour.
STEP 5

How to make the filling for flatbreads? The juiciest, to my taste, moderately sweet and with a pleasant sourness is obtained from sorrel, which grows on the site in the spring and summer. Wash the sorrel thoroughly and dry on paper towels. Finely chop with a knife and place in a metal bowl. If desired, you can make flatbreads with any other filling.
STEP 6

Add sugar (to balance the taste, this is optional) and a little water.
STEP 7

Simmer over low heat until the sorrel turns an olive color. Squeeze out the liquid.
STEP 8

Divide the dough into two parts. Roll it into a thin layer. Place the sorrel filling in the center of the dough, carefully pinch the edges and stretch it into a flat cake with your hands. You can also use a rolling pin. You will get two large cakes. If desired, you can make smaller cakes.
STEP 9

Pour vegetable oil into the frying pan. Warm it up. Place the prepared flatbread on the oil. Fry it over medium heat until golden brown on both sides over low heat. Roast for about 15 minutes total. The time will also depend on the pan.
STEP 10

Remove the finished tortilla from the pan. Serve with tea, coffee or cocoa. Bon appetit!
