  1. STEP 1

    STEP 1

We will prepare and measure the products.

  2. STEP 2

    STEP 2

Kefir should be at room temperature. If it's cold and you don't have time to wait, just warm it up. Just do this on low heat and with constant stirring, otherwise you will get cottage cheese. Add soda and salt to warm kefir and mix well. The acid contained in kefir will begin to interact with the soda, and the mass will bubble.

  3. STEP 3

    STEP 3

We begin to introduce flour in portions. The dough for scones should be very soft, so the amount of flour must be controlled. I added flour in three additions. Each time you need to sift the flour - this way it will be enriched with oxygen, and the baked goods will be more fluffy.

  4. STEP 4

    STEP 4

After each portion of flour, stir it into the dough with a spatula. At first the dough will be quite liquid, then it will begin to thicken.

  5. STEP 5

    STEP 5

We must not miss the moment and stop in time, otherwise we risk getting hard cakes. The finished dough is very sticky, it almost drips off the spatula. Stop adding flour and kneading.

  6. STEP 6

    STEP 6

Place the dough on a table or board sprinkled with flour and knead it a little so that you can form a ball.

  7. STEP 7

    STEP 7

Cover the dough with a bowl and leave to rest for half an hour.

  8. STEP 8

    STEP 8

After time, divide the dough into an equal number of parts. I cooked half the portion, I got three parts. Roll out the first piece into a cake of the desired size and thickness. I made it thin. If you like it thicker, you can not use a rolling pin, but knead the dough with your fingers.

  9. STEP 9

    STEP 9

We will fry the flatbreads in a dry frying pan without adding oil. Place the frying pan on the fire and heat it up. We lay out the blank of the future cake and level it.

  10. STEP 10

    STEP 10

Bake the flatbread covered over low heat for about 5 minutes on each side. If your tortillas are thick, you can increase the time to help them bake better.

  11. STEP 11

    STEP 11

When one side is browned, turn the cake over to the other side. Cover with a lid and fry for another 5 minutes until browned.

  12. STEP 12

    STEP 12

Fry all the tortillas in the same way. While one is baking, you can quickly roll out the next one. Coat the finished cakes with butter while they are hot. Bon appetit!

The recipe is good. Author, thank you! Kefir cakes really turn out soft and fluffy. But I also add any grated cheese to the dough. It tastes more interesting!
