Step-by-step preparation
STEP 1
Prepare the ingredients. Take eggs, kefir, butter and milk out of the refrigerator in advance.
STEP 2
Beat the eggs with a mixer with sugar.
STEP 3
Beat until the latter is completely dissolved.
STEP 4
Pour vegetable oil and kefir into the egg mixture and mix.
STEP 5
In another deeper bowl, combine the dry ingredients: sifted flour, cocoa and baking powder. If you don’t have baking powder, baking soda slaked with vinegar can be an excellent alternative.
STEP 6
Pour the liquid mixture into the dry mixture, stir until a homogeneous thick mixture has the consistency of thick sour cream. Preheat the oven to 180 degrees. Pour the dough into a greased pan and level it over the surface with a damp spoon.
STEP 7
Bake the biscuit for about 40 minutes, checking the doneness with a wooden toothpick.
STEP 8
Let the biscuit cool and cut it into two layers. If the sponge cake turns out to be heaped, it is better to cut it off so that the cake does not turn out lopsided.
STEP 9
Prepare the cream: pour milk into a thick-bottomed pan, add eggs, sugar and sifted flour. Add the flour in parts, stirring the liquid constantly to avoid lumps. Bring the mixture to a boil and cook over low heat until thickened, stirring constantly with a spoon so that the mixture does not burn to the bottom.
STEP 10
After thickening, remove the cream from the heat, add the softened butter cut into pieces.
STEP 11
Stir quickly until it is completely incorporated into the mixture.
STEP 12
Place one cake layer in a springform pan, fill it with cream, and place the second one on top.
STEP 13
Place the mixture in the refrigerator to set the cream for 3 hours, ideally overnight. During this time the cake will be soaked.
STEP 14
Preparing the glaze. Place the dark chocolate broken into small pieces into a saucepan with a thick bottom and pour in the milk. Stirring constantly with a spoon, melt it over low heat until smooth. Remove the cake from the refrigerator, pour the glaze over it and put it back in the refrigerator for the chocolate to completely harden.
STEP 15
Remove the cake from the mold. Decorate the cake with tangerine marmalade slices. Serve to the table. It turns out very tasty.
