  1. STEP 1

    STEP 1

How to fry juicy, soft pork chops in a frying pan? Prepare all the necessary ingredients. Which part of the carcass is best to use for this? Loin is ideal, it is not too fatty and does not contain veins.

  2. STEP 2

    STEP 2

Wash a piece of pork under running water, dry it with napkins and cut into portions about one centimeter thick.

  3. STEP 3

    STEP 3

Cover a piece of loin with a plastic bag and beat it on both sides. Why is it recommended to cover the meat with film? This is done so that there is no splashing when beating and your kitchen remains as clean as possible after this procedure.

  4. STEP 4

    STEP 4

Do the same with all the pieces.

  5. STEP 5

    STEP 5

Mix salt and sugar in a small container. In the recipe I used Adyghe salt; it contains some dry spices, which undoubtedly improves the taste of the finished meat. If you wish, you can add your favorite spices.

  6. STEP 6

    STEP 6

Brush each piece of loin with a mixture of salt and sugar on both sides.

  7. STEP 7

    STEP 7

Transfer the meat to a deep bowl or bowl.

  8. STEP 8

    STEP 8

Fill with milk. You can take milk with any percentage of fat content, it doesn’t really matter.

  9. STEP 9

    STEP 9

Lightly crush the meat with your hands and leave in milk for about an hour. The pieces will need to be mixed a couple of times during this time. The chops will absorb the milk, making them very tender.

  10. STEP 10

    STEP 10

Wash the egg thoroughly in running water and soda, as there may be harmful bacteria on its surface. Pour it into a deep plate and shake with a fork. Add a pinch of salt and ground pepper (I added a little dry meat seasoning myself). Mix everything again.

  11. STEP 11

    STEP 11

Dip the loin into the egg on both sides.

  12. STEP 12

    STEP 12

    Then roll in flour.

  13. STEP 13

    STEP 13

Heat vegetable oil in a frying pan. Send the chops to fry over medium heat on one side first (three to four minutes will be enough).

  14. STEP 14

    STEP 14

Then on the other side until done (also about 3 minutes).

  15. STEP 15

    STEP 15

Place the finished chops on a plate. If desired, you can sprinkle with chopped herbs.

  16. STEP 16

    STEP 16

Serve these delicious, tender pork chops hot. Bon appetit!

I usually soak beef chops in milk; the meat turns out so tender and juicy that you can immediately tell that the chops are beef. This time I cooked juicy, soft pork chops in a frying pan. I had very little milk left, less than half a glass, so I additionally greased the chops with mayonnaise. I fried it in a frying pan, rolled it in flour and dipped it in a beaten egg, as in the recipe. Very tasty, but with mayonnaise it turned out richer than with just milk. Thanks for the recipe!
