It is best to use food grade detergents and a brush. Beat them into a bowl. Add sugar and a pinch of salt to the eggs (it will act as a flavor enhancer). Beat them with a mixer at high speed until a fluffy light mass.

By doing this you will not only remove possible debris, but also saturate the flour with oxygen, which will make the cake more airy.

    Stir the dough until smooth. You can already use a spatula or do this with a mixer. The dough will be quite liquid, as it should be.

    The next step is to prepare the filling. Prepare the filling for it. Cottage cheese is suitable for any fat content, the main thing is that it is tasty and natural. I have a grain one, it’s not scary, since the filling will come through with a blender.

    How to make the filling? Place the cottage cheese in a deep bowl. Add sugar, starch, vanillin to it, beat in the egg. Add lemon zest to taste - I grated it directly into the bowl, half a lemon was enough for me.

    Take a baking dish. I have a detachable one, with a diameter of 20 cm. Lubricate it with a drop of vegetable oil. I previously covered the bottom with parchment. Pour half the dough onto the bottom and smooth it out with a spatula.

Previously, I prepared similar pies only with berries and fruits. But somehow I didn’t think of adding cottage cheese. But in vain. It turns out very tasty. Since I prepared this pie early in the morning, I did not use a mixer or blender so as not to wake anyone up. I did everything by hand. I didn’t strain the cottage cheese through a sieve, I just mixed it well with the other necessary ingredients. Instead of baking powder, I took half a teaspoon of baking soda (slaked with vinegar). The jellied pie with cottage cheese in the oven turned out incredibly soft and fluffy. In my opinion, it is perfect for both tea drinking and breakfast. Thank you very much for the wonderful recipe!
