STEP 1

How to make instant marinated tomatoes? Prepare all the necessary ingredients. Take tomatoes that are not very large, so that they have time to marinate within a day, and dense, so that they do not fall apart in your hands after cooking. I took the hot pepper dried in small pieces, but you can also take fresh pepper, then peel it from the seeds and cut it into pieces.
STEP 2

First, prepare the marinade for the tomatoes. To do this, pour water into a saucepan and put it on fire. It is best to take water not from the tap, but filtered through a purification system. Add sugar, salt, black pepper and allspice to the pan. Instead of regular allspice, I lately prefer Sichuan pepper. It has a more delicate aroma and taste, although it is more expensive than regular allspice.
STEP 3

Bring the marinade to a boil and simmer over low heat for 2-3 minutes until the salt and sugar dissolve. Remove from heat, pour in vinegar and stir. Regular vinegar can be replaced with apple or grape vinegar.
STEP 4

While the marinade is preparing, we will prepare our tomatoes. To do this, peel the garlic and cut into slices so that the number of them is the same as tomatoes. Wash the tomatoes in running water, dry and make cuts from the side of the stalk to 2/3 of the height. Insert a cut clove of garlic into each cut.
STEP 5

Then sprinkle some hot pepper or insert a piece of fresh hot pepper into the cut area.
STEP 6

Wash the celery greens in running water, separate them into leaves and place one in each cut. It is most convenient to do this with the blunt side of a knife, simply pressing the leaf inward. Celery can be replaced with basil or regular dill.
STEP 7

Place all the tomatoes prepared in this way into a deep cup.
STEP 8

Pour the hot marinade over the prepared tomatoes. Place a dish on top so that it submerges the tomatoes completely and prevents them from floating. Leave them until they cool completely, and then put them in the refrigerator for one day. Please note that the larger the tomatoes, the longer they need to marinate. After a while, remove the tomatoes from the refrigerator, scoop them out of the marinade with a spoon and serve.
STEP 9

These marinated tomatoes with garlic and herbs are very tasty with hot boiled potatoes, meat and black bread. And if there is also a glass for your appetite, then it will be just a fairy tale. Bon appetit!
