    Wash and scrape the meat. Remove the toes from the pork legs. Place the washed meat in a saucepan, add water and let it boil. Drain off the first foamy water and wash the meat and pan. Place the meat back into the pan, add water, and bring to a boil.

    Add carrots, pepper and salt and put on the lowest heat and simmer for 3 hours. Add onion and bay leaf and simmer for another 2-3 hours. At the end of the specified time, remove meat and vegetables from the broth, strain the broth through several layers of gauze.

    Remove the bones from the pork and rooster and chop finely, pass the garlic through a press and combine with the meat. Place the chopped meat and garlic into jellied meat molds, pour in the strained broth and leave to cool to room temperature.
