STEP 1
How to make royal roll from mackerel? Prepare all the necessary ingredients. You need to choose larger, fatter mackerel with a wide back. Boiled eggs in the recipe can be replaced with grated cheese.
STEP 2
Let's start by preparing the filling. Peel one large onion, wash, dry and finely chop. Take a frying pan, heat the vegetable oil in it and fry the onion until transparent for about 3 minutes.
STEP 3
Take a large carrot, wash it with a brush in running water, peel it and grate it on a coarse grater. Send the grated carrots to fry in a frying pan with the onions. Stir, add a little salt and pepper to taste. Fry the carrots until half cooked, about 3 minutes and turn off the heat. The carrots will be cooked through further cooking and will retain their shape.
STEP 4
Place the prepared fried onions and carrots on a plate and let cool slightly.
STEP 5
Take the eggs, wash them with baking soda under running water, as there may be harmful bacteria on their surface. Boil eggs hard and cool in cold water. Peel the cooled eggs from their shells and grate them on a coarse grater.
STEP 6
Now let's get down to the fun part - preparing the fish. I buy mackerel fresh frozen. The main thing is to make sure that it is not frozen, that it has not been defrosted several times, and that there is no frost. I came across a very large mackerel, 600 grams. Wash the fish, cut off the head and tail. Use kitchen scissors to cut off all the fins. Carefully cut the belly of the mackerel and clean it from the insides, remove the black films.
STEP 7
Make cuts on both sides of the fish's spine and cut it out. Then, using your fingers to feel the fillet, remove all the bones. There are not many of them, mostly ribs and some bones where the fins were.
STEP 8
Place the cut mackerel fillets on cling film. Salt and pepper the fish to taste. Sprinkle with half the volume of gelatin. It will help maintain the attractive appearance of the finished roll. At about the same time, fill a saucepan with clean water and place it on the stove; we will need it soon.
STEP 9
Next, let's start laying out the filling. Place the cooled onion and carrot mixture in the first layer. Spread the filling over the fish, leaving a couple of centimeters of free edge on both sides.
STEP 10
Then spread the egg over the fish, also leaving a couple of centimeters on each side. Sprinkle with remaining gelatin.
STEP 11
Carefully roll the roll using cling film. Then wrap the rolled roll well, also with cling film (4-5 layers), turn the film over and wrap the fish in several more layers across. You can also tie the roll with thread for strength.
STEP 12
Place the roll in a pan of boiling water and cook for 30 minutes with the lid closed. Remove from the water, cool for about 15 minutes. Then put under pressure (I just cover the top with a cutting board and put a carton of milk on it).
STEP 13
Leave the roll in the refrigerator under pressure for 7 hours (overnight). After this time, remove the film from the fish. All that remains is to cut the roll into rings. Bon appetit!
