  1. STEP 1

    STEP 1

How to make eclair cakes with boiled condensed milk? First prepare the choux pastry for the eclairs. Prepare your food. Take high-quality, natural oil, without vegetable additives. The number of eggs will depend on their size and the consistency of the custard base.

  2. STEP 2

    STEP 2

How to make choux pastry? Pour milk and water into a ladle or pan, put butter there, add salt, sugar and put on fire. While stirring, melt the butter, but do not bring it to a boil, just until the first bubbles appear.

  3. STEP 3

    STEP 3

Pour all the flour into the ladle and immediately begin stirring it vigorously with a spatula, thus brewing the dough. Do not remove the dishes from the heat, just reduce the heat to low. Keep the dough on the fire for 2-3 minutes, working with a spatula all the time. Once the dough has formed into a ball, turn off the heat and remove the pan from the stove.

  4. STEP 4

    STEP 4

Let the dough cool slightly. Start beating eggs into it one at a time. After each egg, stir the dough vigorously. At first it will fall apart, but then it will become homogeneous. I stirred with a spatula, but you can do this with a mixer.

  5. STEP 5

    STEP 5

The number of eggs may vary, depending on their size and the quality of the flour. Three will go away for sure, but don’t pour in the fourth all at once. You need to look at the dough, it should become smooth, shiny and slightly fluid.

  6. STEP 6

    STEP 6

Transfer the dough into a piping bag. Line a baking tray with baking paper; I used a Teflon mat. Pipe the eclairs into thin tubes. Use a fork to shape them.

  7. STEP 7

    STEP 7

Bake the eclairs in the oven, preheated to 180°C, for 30 minutes. After about 20 minutes, I opened the oven door for a second, releasing excess steam. The eclairs should grow well in size and become golden. Cool the finished eclairs on a wire rack.

  8. STEP 8

    STEP 8

While the eclairs are baking and cooling, make the cream. Prepare the food for it; it should be at room temperature. You can take ready-made condensed milk or cook it yourself. Choose high-quality, proven condensed milk. Without vegetable fats and food additives. The composition should contain only two ingredients: milk and sugar. Also use the best oil, the taste of the finished eclairs will depend on this.

  9. STEP 9

    STEP 9

How to make cream? Beat boiled and regular condensed milk with butter until fluffy and homogeneous.

  10. STEP 10

    STEP 10

Cut the eclairs on the side with a sharp knife. Place the cream into a pastry bag. Fill the eclairs with cream using a bag. Ready! Bon appetit!

Great recipe! I once made profiteroles using water, but when I saw this recipe, I decided to try it too. The dough turned out very tender and tasty. Now this is the only way I will bake! Ekaterina, thank you so much!!! For the filling I made a cream ice cream with milk. Delicious! I'm having a blast!
