STEP 1
How to make homemade beef noodles? Prepare the necessary ingredients for the meat sauce. Wash the beef, dry it with paper towels and cut into small pieces. It is better to take fresh meat, but if you have frozen meat, defrost it in the refrigerator first, so the meat will retain the correct structure and juiciness.
STEP 2
Place the beef in a frying pan, add water until it completely covers the meat, and place over moderate heat.
STEP 3
After boiling, remove all the foam that has formed, add salt, add peppercorns, cover with a lid, reduce the heat to low and simmer until soft for 1.5-2 hours.
STEP 4
Peel the onion, rinse it, cut it into half rings or quarter rings.
STEP 5
Wash the carrots, peel and cut into large strips.
STEP 6
After 1.5-2 hours, pour the excess broth into a separate container and set it aside, it will come in handy later. Pour vegetable oil into the meat, add onions and carrots and fry everything for 5-7 minutes over medium heat, stirring occasionally.
STEP 7
Add tomato paste and pour in enough broth to completely cover the beef pieces. Cover the pan with a lid and simmer for about 60 minutes.
STEP 8
Prepare the necessary ingredients for the noodles. Beat the eggs into a bowl, add salt, vegetable oil and mix everything with a whisk.
STEP 9
Sift most of the flour into a deep bowl, make a well and pour the butter-egg mixture into it. Grabbing the flour from the edges with a whisk, carefully begin kneading the dough. You may need a little more or a little less flour.
STEP 10
Sprinkle the countertop with flour, place the dough on it and continue kneading with your hands. If necessary, add flour in parts to achieve the desired consistency. The dough should be soft and elastic. Wrap it in cling film and leave to rest for half an hour.
STEP 11
Dust your rolling pin and countertop with flour and roll out the dough into a very thin sheet.
STEP 12
Divide it into two parts and cut into long strips 5 mm thick, as in the photo.
STEP 13
Sprinkle them with flour to prevent them from sticking together and leave to dry for an hour. Then put water on the stove, add salt, wait until it boils, and put the noodles in it. Cook for the first two minutes, stirring to prevent the noodles from sticking. Then cook for another 5-7 minutes until done and drain in a colander. Mix the prepared noodles with the beef. Noodles with beef and vegetables are ready. Bon appetit!
