It is better to take fresh meat, but if you have frozen meat, defrost it in the refrigerator first, so the meat will retain the correct structure and juiciness.

    Place the beef in a frying pan, add water until it completely covers the meat, and place over moderate heat.

    After boiling, remove all the foam that has formed, add salt, add peppercorns, cover with a lid, reduce the heat to low and simmer until soft for 1.5-2 hours.

Homemade beef noodles turned out incredibly tasty, satisfying and aromatic. The beef pieces melt in your mouth. The dish will appeal not only to adults but also to children. First, I washed the meat and cut it into small portions. I put it in a frying pan and filled it with water so that it completely covered the meat. Simmer with the lid closed for 1.5 hours over moderate heat. Removed the foam that formed during boiling. I cut the onions into half rings and the carrots into strips. I poured the excess broth from the frying pan into a container, I will need it later. Added carrots, onions, peppercorns, salt and vegetable oil. And fried for 7 minutes. Then I added broth to cover the meat and vegetables. And simmered for another hour. To prepare the noodles, add eggs, salt and vegetable oil to a bowl and mix with a whisk. I poured most of the sifted flour into a deep cup. I made a depression in the center and poured the egg-butter mixture into it and kneaded the dough. Sprinkle the table with flour, place the dough on it and continue kneading. Then covered it with cling film and left for 30 minutes. Next, I rolled out the dough into a thin layer and cut it into short strips. You can cut it thinner or thicker. Sprinkled flour on top and left for one hour. I put the water on the fire and added salt. When the water boiled, I poured the noodles into it. For the first two minutes I stirred continuously so as not to stick together. After boiling, cook for another seven minutes. I threw the noodles into a colander and let the water drain. Then I added meat to the noodles and served.
