STEP 1

How to fry zucchini on a grill pan without oil? Very simple! To begin, prepare all the necessary ingredients according to the list. I used regular zucchini with pale green skin. Young zucchini are also suitable.
STEP 2

Wash the zucchini and dry. Trim the ends on both sides. Cut the zucchini lengthwise into slices no thicker than 1 cm. You can use a vegetable peeler.
STEP 3

Sprinkle the chopped zucchini with dried herbs, salt and pepper and leave for 5-7 minutes to allow the spices to absorb. Before frying, it is better to blot the zucchini with napkins. If you wish, you can grease the zucchini with vegetable oil, but in this recipe the zucchini is cooked without oil.
STEP 4

Heat the grill pan well over medium heat. Place the zucchini slices and fry until the characteristic crispy marks appear on the grooved surface of the pan, about 1-2 minutes. It is important not to move the zucchini around the pan, otherwise the clear, beautiful pattern will shift.
STEP 5

Then turn the slices over to the other side and fry until charred on the other side. If you wish, you can cook the zucchini in a regular frying pan.
STEP 6

Transfer the finished zucchini to a plate. Serve as a hot or cold appetizer on its own or as a side dish for meat, poultry or fish. Bon appetit!
