Georgian green caviar with eggplant and Suluguni cheese

Even vegetarians will not refuse such fantastically tasty caviar. One summer, when I had tried eggplants in all forms and I even wanted to take a break from them altogether, while buying books, I borrowed a wall calendar with culinary recipes from Georgian cuisine. It is clear that I have a good dozen collections of Georgian culinary recipes, in which there are more than a dozen dishes. Hello! The recipe requires 100 ml of vegetable oil. And it will take about five minutes to bake the eggplants. They bake quickly in a preheated oven. Once they become soft and change color, they are ready. I never cook according to time, so I can’t say with precision down to the second.
