  1. STEP 1

    STEP 1

How to bake a fruit pie with caramel crust in the oven? Very simple! To begin, prepare all the necessary ingredients according to the list. And start by preparing the test. Take the highest grade flour, select large eggs. Milk of any fat content is suitable. I use brown cane sugar, but if you don’t have that, you can replace it with regular sugar.

  2. STEP 2

    STEP 2

Sift the flour with baking powder and salt through a sieve.

  3. STEP 3

    STEP 3

Pour the sifted flour into the blender bowl. Add 100g diced cold butter and 50-70g sugar depending on the desired sweetness of the dough. Beat everything into fine crumbs. You may need more or less flour, depending on the consistency of the dough.

  4. STEP 4

    STEP 4

Combine the eggs with milk and whisk until smooth.

  5. STEP 5

    STEP 5

Pour the egg mixture into the flour crumbs and stir to combine. The dough will be viscous and sticky.

  6. STEP 6

    STEP 6

Transfer the dough into a deep baking dish with a diameter of 20-22 cm greased with butter and level it out. Please note that the dough will rise during baking and some of the melted butter may spill out if the sides are not high enough.

  7. STEP 7

    STEP 7

Mix the remaining sugar with cinnamon.

  8. STEP 8

    STEP 8

Melt the remaining butter over low heat or in the microwave.

  9. STEP 9

    STEP 9

Now prepare the fruit filling. I have red plums and pears. You can add other fruits: apple, cherry (remove seeds and drain juice).

  10. STEP 10

    STEP 10

Wash the plums, cut them into halves and remove the pits. Take plums that are ripe but firm so that they retain their shape when baking. Cut the pear into slices and also remove the seeds.

  11. STEP 11

    STEP 11

Place the fruit on the dough and press lightly.

  12. STEP 12

    STEP 12

Sprinkle cinnamon sugar on top of the pie. You can reduce the amount of sugar to your taste.

  13. STEP 13

    STEP 13

Pour melted butter evenly on top. Bake the pie at 180ºC for 30-40 minutes. The exact time depends on your oven and the thickness of the cake. I advise you to place a piece of foil or parchment under the pan in case the cake rises too much and the height of the pan is not enough. Then the melted butter will drip onto the bottom of the oven. Bon appetit!

The pie is really very tasty. Only I couldn’t replicate such a beautiful top; instead of caramel, I ended up with a crispy sugar crust. Nevertheless, I think that the pie is successful) Because it is not really tasty and juicy. For fruit I had fresh plums and apples. The inside of the pie is layered from the apples and juicy from the plums. The dough with butter is incredibly soft. By the way, I also ground the crumbs in a blender, I really liked these small grains the size of semolina! You cannot achieve this effect with your hands and a knife. I also liked the crispy crust on top, it’s delicious, crunchy like candy. I will bake this pie again, try it with other fruits and next time I will pour more butter on top)
