Fried potatoes with fresh mushrooms and onions

STEP 1
Let's prepare the ingredients. The longest time in preparation for preparing this dish is collecting honey mushrooms. This process is very important and responsible; you need to be able to distinguish real honey mushrooms from false ones, so as not to collect poisonous mushrooms. After collecting the honey mushrooms, carefully sort them out, wash them, cut off part of the stem, leaving a couple of centimeters on top.
STEP 2
It is better to freshly pick mushrooms, in order to remove not only various kinds of dirt, but also insects hidden in the mushrooms, soak them in salted cold water for a couple of hours. Then we rinse the honey mushrooms again and place them in a colander to drain off excess water. Large mushroom caps can be cut, small mushroom caps can be left whole.
STEP 3
Wash the potatoes, peel them and cut them into thin strips or cubes, as you like. Peel the onions, if the head is not large, cut it into rings, if large, into halves of rings.
STEP 4
Pour vegetable oil into the frying pan. Let's warm it up. Place honey mushrooms in a frying pan. Add bay leaf and peppercorns. Fry the mushrooms in oil, stirring with a spatula, over medium heat for about 10 minutes.
STEP 5
Then add the cooked onions to the mushrooms, mix and continue to fry them together for 7 minutes, do not forget to stir periodically with a spatula. Remove the bay leaf from the pan.
STEP 6
Place the potatoes in the frying pan with the mushrooms, add a little more vegetable oil, stir and fry for about 20 minutes, until the potatoes are soft, over medium heat. The pan should not be covered with a lid during frying so that the potatoes do not turn into mashed potatoes.
STEP 7
You need to stir periodically, but not often, so as not to break the potato blocks. At the end of frying, add salt to taste. Gently mix the potatoes with the mushrooms and turn off the heat. The dish is ready. Serve to the table, sprinkled with chopped fresh herbs, with fresh vegetables and bread. Bon appetit!
