Fried pies with eggplant, meat and mushrooms

STEP 1

For the filling, cook the beef in boiling water with carrots, onions and bay leaves. Cool, strain the broth. Finely chop the meat.
STEP 2

For the dough, mix all ingredients with 240 ml of warm water in a bowl until smooth, quickly knead the dough. Cover the dough with cling film and refrigerate for 1 hour.
STEP 3

Peel the eggplant and cut into small cubes. Also chop the onions and mushrooms. Fry the eggplants until golden brown. Place the eggplants in a bowl. Fry the mushrooms in oil until half cooked, add the onion and fry until the vegetables are ready. Finally add the eggplants.

Add the chopped meat to the vegetables, salt and pepper to taste, pour in a little broth, stir, and simmer over low heat for 10 minutes. Cool.
STEP 6

Divide the dough into pieces of equal size, roll out into circles with a diameter of about 10 cm, put the filling in the center, and make round pies.
STEP 7

Fry the pies in hot oil on both sides until golden brown.
STEP 8

Before serving, place the pies on paper towels to drain excess fat. Serve the pies warm. Bon appetit!
