STEP 1

How to fry eggplants with cheese and garlic? First, prepare the necessary ingredients. If desired, you can replace mayonnaise with sour cream. Choose any cheese, I took regular Russian cheese.
STEP 2

Wash the eggplants well and cut into thin slices.
STEP 3

Place the plates on a plate, sprinkle them with salt and leave for 10 minutes to remove the bitterness. Then rinse and dry on a towel. Please note that in some cases there is no need to remove bitterness from eggplants - usually young vegetables, as well as some special varieties, are not bitter.
STEP 4

Heat a frying pan with vegetable oil and fry the eggplants on both sides until light golden brown.
STEP 5

Place cooked eggplants on paper napkins or towels to absorb excess oil.
STEP 6

Prepare the sauce by peeling the garlic and passing it through a press.
STEP 7

Grate the cheese on a fine grater.
STEP 8

Combine garlic, cheese and mayonnaise in a bowl.
STEP 9

Stir until smooth.
STEP 10

Wash the tomatoes thoroughly and cut into thin slices.
STEP 11

Spread the fried eggplant with sauce, place a slice of tomato on top, and roll into a roll.
STEP 12

Place the eggplants with tomatoes and cheese on a dish, garnish with herbs if desired, and serve cold. Bon appetit!
