I haven’t cooked “mother-in-law’s tongues” for a long time, that’s what we call them. After winter harvesting, there were two small eggplants left. I found this recipe through a search and really wanted to make fried eggplants with cheese. I cut the eggplants into strips, added salt and fried until golden brown. For the sauce, I mixed 67% mayonnaise with grated cheese and garlic; according to the author’s advice, I did not add salt. Cut the tomatoes into thin slices. I assembled the appetizer, but it was not possible to wrap my strips in a roll, since my eggplants were initially small, so the strips were short. I just folded them in half, putting in the sauce and tomato) I didn’t have time to put them in the refrigerator, the appetizer flew off the table in the blink of an eye))) Eggplant, garlic, tomato, mayonnaise and cheese - this is the best combination! I really liked the fried eggplant with cheese. Especially because the filling in them can be changed to suit your tastes. Take different cheeses and so on. I once used stewed zucchini instead of tomatoes.
