Fresh porcini mushroom soup with potatoes
Ingredients
Step-by-step preparation
STEP 1
How to make fresh porcini mushroom soup with potatoes? Prepare the necessary ingredients for this. The soup can be prepared from any mushrooms, but the most delicious and aromatic ones are white ones.
STEP 2
The ideal option would be to collect mushrooms yourself in the forest. This is the only way you can be sure that they were collected in an environmentally friendly place, away from roads. But if this is not possible, then you can buy mushrooms.
STEP 3
Use a knife to clean all dirt from the mushrooms. Remove any wormy parts. Then cut the mushrooms into large pieces. They will shrink in size when cooked. Pour water over the chopped mushrooms and rinse them several times. Read this article on how to choose the perfect frying pan. Link at the end of this recipe.
STEP 4
Boil the mushrooms in boiling water for 20-30 minutes. Be sure to skim off any foam that appears during cooking. This will remove all dirt and small animals that were missed during cleaning. Then drain the mushrooms in a colander and rinse with water. Now the mushrooms are ready to be eaten. In this form they can be frozen.
STEP 5
For the soup, pour clean water into the pan and add boiled mushrooms. Place on the fire and bring to a boil.
STEP 6
Add chopped potatoes to the pan. Cook everything together for 10-12 minutes.
STEP 7
Peel the onion and rinse in cold water. Then finely chop the onion. Pour vegetable oil into a hot frying pan and fry the onion for 3-4 minutes until golden brown. You will learn how to choose a frying pan and oil for frying by reading articles on these topics. There are links to them at the end of this recipe.
STEP 8
Place the fried onions in a saucepan with soup. Add salt and spices to taste. As a spice, it will be enough to add only ground pepper. Other spices will overpower the flavor of the mushrooms themselves. Boil everything together for another 5-7 minutes.
STEP 9
At the end of cooking, add chopped fresh herbs. Aromatic soup with porcini mushrooms is ready! Bon appetit!
