STEP 1
How to prepare fresh cucumbers for the winter in jars? Prepare the necessary ingredients. Sort the cucumbers (it is better to choose fresh and young ones), remove spoiled fruits and rinse them thoroughly under running water. Place the cucumbers in a deep container, cover with cold water and leave to soak for 4 hours. This will make the cucumbers crispy. After the specified time, rinse them again and let the water drain from them. Cut off the ends of the cucumbers on both sides.
STEP 2
Prepare jars for preparation. For the specified amount of products you will need two liter jars or one three-liter jar. Wash them with soda in cold water and sterilize them using one of the convenient and proven methods: in a water bath, in the microwave or in the oven. I like the last method, which allows you to quickly prepare a lot of containers for preservation. You can also sterilize washed metal lids in the oven along with the jars.
STEP 3
Wash the greens for pickling cucumbers thoroughly and dry.
STEP 4
At the bottom of each sterile jar, place herbs, two cloves of garlic, one bay leaf, two cloves and a couple of allspice peas. For more flavor, you can put a piece of peeled horseradish root in the jar.
STEP 5
Place the cucumbers tightly on top, it is better to place them vertically, they will look more beautiful in the jar, and this way more fruit will fit into the container. Place the cucumbers up to the shoulders of the jar, and place the remaining garlic cloves on top. Boil water in a kettle or saucepan. Pour boiling water over the cucumbers in the jars until it completely covers them. To prevent the jars from bursting from boiling water, you need to pour it in a thin stream and try to get it into the center and not onto the glass.
STEP 6
Cover the jars with lids and leave for 20 minutes. Then drain the water into a saucepan, add sugar and salt. Bring the water to a boil, stirring with a spoon until the sugar and salt are completely dissolved. Pour in table vinegar, bring the marinade to a boil and turn off the heat.
STEP 7
Pour the prepared marinade over the cucumbers in the jars. Roll up the jars with lids, turn them upside down, wrap them in a warm blanket and leave them overnight at room temperature. In the future, the workpiece can be stored in a cool place or at room temperature. Bon appetit!
