Fresh cabbage soup with meat

STEP 1
Let's prepare the ingredients for the soup according to the list. If desired, any of the components of the dish can be replaced or the proportions of the ingredients can be changed. For the soup, you can use pork or beef, whichever you prefer. With pork the soup will be fattier and higher in calories, with beef it will be lighter. Wash the meat, cut it into portions, and rinse it again to remove any blood.
STEP 2
Wash the potatoes, peel them and cut them into cubes or strips.
STEP 3
We clean the white cabbage from the top dry leaves and chop it into thin strips. The soup will taste better if the cabbage is young and fresh.
STEP 4
Place the meat in a pan with water. We put it on fire. Add a pinch of salt, bay leaf and peppercorns. Cook the meat for 30 minutes. Strain the broth or remove the foam that forms on the surface of the broth so that the soup is clear. Take out the bay leaf. Place cooked white cabbage and potatoes into the pan. Cook the meat and vegetables for another 15 minutes over medium heat.
STEP 5
Meanwhile, while the meat is cooking, wash, peel, cut into strips or grate the carrots on a medium grater.
STEP 6
Peel the onions and finely chop them with a knife.
STEP 7
Heat vegetable oil in a frying pan. To make the soup more flavorful, you can replace vegetable oil with butter, but it will turn out tastier, but higher in calories. Place carrots and onions in hot oil. Fry until golden brown.
STEP 8
Transfer the fried vegetables from the frying pan to the pan. Cook over medium heat for about 7 minutes. Add salt and ground black pepper to taste. If desired, you can sprinkle with chopped fresh herbs. Turn off the fire immediately. Let the soup brew under the lid for about 20 minutes.
STEP 9
Pour the soup into bowls. Serve to the table with sour cream and fresh bread. Bon appetit!
