STEP 1

How to make dressing for cabbage soup from fresh cabbage in a jar for the winter? Incredibly simple! First of all, prepare all the necessary products. Choose firm cabbage with crispy leaves. Young cabbage is not suitable for the recipe. Use fleshy peppers with thick walls.
STEP 2

So, remove the outer damaged leaves from the cabbage and rinse the head of cabbage. Chop the vegetable into thin strips or chop using a vegetable cutter. Place in a deep saucepan.
STEP 3

Add 1.5 tbsp. salt and 1 tbsp. Sahara.
STEP 4

Mix everything well, wrapping cabbage with your hands. So she will settle faster and give juice.
STEP 5

Peel the carrots and onions. Remove the seed box from the bell pepper. Rinse all vegetables under running water. Cut the carrots into slices or cubes. Alternatively, carrots can be grated using a grater with large teeth. Chop the onion and pepper into medium-sized cubes or feathers.
STEP 6

Transfer the chopped vegetables to the cabbage.
STEP 7

Pour in 5 tbsp. refined vegetable oil and mix everything thoroughly.
STEP 8

Cut the tomatoes into cubes and add to the pan with the rest of the vegetables. If desired, peel the tomatoes first.
STEP 9

Mix everything so that all the vegetables are evenly distributed among themselves. Add a bay leaf and a few black or allspice peas.
STEP 10

Place the pan on the stove. Bring to a boil over medium heat, covered. Next, reduce the flame to minimum and simmer the workpiece for another 20-25 minutes. During the stewing process, stir the cabbage at least 3 times. At the end, pour in the vinegar and mix everything again. Wash jars and lids and then sterilize. I usually sterilize the jars in a water bath, and fill the lids with boiling water and leave it for 5 minutes. Read more about sterilization at the end of the recipe.
STEP 11

Spread the vegetable preparation up to the very neck. The bay leaves can be thrown away; they have already given up their aroma to the preparation.
STEP 12

Close the jars with the lids using the key. Turn the top upside down and leave under a warm blanket until it cools completely. Next, transfer the workpiece to the basement or pantry and store until winter and beyond.
STEP 13

The first sample can be taken immediately after preparation.
