Today I made three small jars of cabbage soup for the winter. I took all the vegetables by eye. First of all, I prepared them for further processing. I peeled the carrots and onions and cut them into semicircles, cut the tomatoes into slices, and shredded the cabbage. The only thing I didn’t add was bell pepper. I immediately placed the cabbage in a large saucepan, added salt and sugar to it, and mashed it with my hands so that it would release juice. Then I put onions, carrots and tomatoes in a pan, added vegetable oil, peppercorns and bay leaves, stirred and put on fire. After waiting for the vegetables to settle and become soft, I left them to simmer over low heat for 25 minutes. I stirred everything periodically. A little juice came out from the vegetables, but enough for stewing. The mixture heated up evenly, at the bottom of the pan there were many air bubbles from boiling. At the very end, I added vinegar to the pan, mixed everything well, left the vegetables to warm up for a minute, then put them in sterilized jars and closed them with lids.
